This year I’m trying to do my Thanksgiving with all fresh vegetables and I’m trying to get as many of those at the local farmer’s market before the grocery store. I’m also making the pumpkin pies straight from the pumpkin! I’m trying to use all of my Pyrex pans so I don’t have to use disposable tins, and no throw away utensils or plates/cups/etc…

Not sure what’s on the Christmas Day menu in the US. If it’s beef, you could consider ensuring it’s grass-fed. The carbon hoofprint of a corn-fed feedlot animal is a lot higher, as described in this recent posting on SolarUK’s weblog:
